I don’t always feel like cooking. Especially when I have been at work all day and gone out for lunch. Today I had a lovely lunch with my Mum at a local Thai restaurant. I had a great Massaman curry for lunch but it meant I certainly didn’t need a big meal for dinner.
So one of my go-to meals when I want a quick meal when I get home are these steamed thai coconut curry fish fillets:
They are low in calorie and reasonably tasty by frozen food standards. I do them with a jacket potato and if I am feeling very motivated to be healthy (which is not very often) some steamed vegetables.
