I try not to use pre-packaged food too much. Mainly because when you read the labels they are quite scary and especially the calories that are included in a serve – a serve which is often miniscule. I tried to make this pesto chicken bake from Kalyn of Kalyn’s Kitchen using homemade pesto and it was not very good at all. The pesto recipe I used (not the one linked to in the recipe on Kalyn’s Kitchen I must point out) was awful. The mix of ingredients was just totally wrong. Too much pine nut and olive oil I think.
But I have since made the recipe again using bought pesto and it was delicious. Not only that, the whole recipe only has four ingredients (how good is that), was so quick to prepare and while not the quickest recipe I have ever cooked, the actual time spent actively cooking is minimal.
This would have to be one of the easiest recipes I have ever made and at the moment I need easy. I am going to keep working on making a basil pesto and if you happen to have another kind of pesto in the house like sun dried tomato pesto I think it would work just as well and possibly be even more delicious.
The first time I made this recipe I made enough for two meals and if I think it would reheat well – I just can’t give a definitive answer as this first batch was so awful I couldn’t eat the second serving. It was such a waste of food. The next couple of times I only made a single serve and to be honest it is so little effort I would probably make it fresh each time.
To make this for one I used:
- A couple of shots of cooking spray
- 130g of skinless, boneless chicken breast
- 2tbs of basil pesto (but go with what you have if you have some other flavour in the fridge)
- 2 tbs of low fat mozzarella cheese
The only change I made to the original recipe instructions is to cut the initial chicken cooking time to 20 minutes. Because it is less chicken I found it cooked quicker. Just keep an eye on it around the 20 minutes mark and if it needs a bit more cooking then pop it on for another 5 minutes.
Preparation time is 5 minutes max and the total cooking time is 25-30 minutes. One serve has about 280 calories.
