I had planned to post another recipe today but this recipe for pan fried gnocchi, sun-dried tomatoes and white bean is just so genius I wanted to share it with you as soon as possible. Now you know I like gnocchi and had a go at making my own – quite successfully even if I do say so myself. And I have made one pot recipes with it like this skillet ham and cheese gnocchi which still involves cooking the gnocchi in a liquid – just the liquid is a sauce. But I haven’t even thought to pan fry until I came across this recipe for pan-fried gnocchi with sun dried tomatoes and white bean from Denise of Sweet Peas and Saffron.
I love fried potatoes but you know they are a bit of an effort to make well, peeling, par boiling etc before you get around to the actual frying bit. Not so with pan fried gnocchi. Toss those babies in the fry pan straight from the packet (unless you have some lovely homemade ones lying around) and you are soon in crispy potato heaven. Everything is done in one pot and is ready to eat in 30 minutes.
I was worried about the lack of sauce in the recipe and that the white beans might make it taste like carb overload. But it does just work. The gnocchi are crispy, the white beans are lovely and tender and the sun-dried tomatoes add that touch of sweetness. Added bonus is the super healthy spinach so you get some iron all while eating vegetarian. Though I did mess up and only put in half the amount of spinach I should have. I missed the second cup sitting off to the side.
I made a batch of two servings as I am trying to cut back on the cooking at the moment with the Christmas crazies setting in and too much to do. The leftovers the next day were ok but not as good as when fresh as the gnocchi lost its crispiness which is what really makes this recipe. Next time I would just make a serving for one. But the recipe is so quick and easy that it isn’t a chore to make.
I am already planning what else I could do with pan-fried gnocchi. I am in love.
To make a serving for two I used the following ingredients:
- 250g of gnocchi
- 1/2 tbs of olive oil
- Salt and pepper to taste
- 1/4 tsp of dried chili flakes
- 1 cup of mushrooms, sliced
- 2 tbs plus a smidge of sun dried tomatoes, diced
- 1 cup of loosely packed spinach (it really should have been 2 cups but I forgot to add the second cup)
- 2/3 of a 400g can of white beans (cannellini beans) drained and rinsed
- 2 tbs of parmesan cheese, grated
I followed the instructions on Sweet Peas and Saffron with no changes needed. Preparation time is 5-10 minutes and cook time is about 15 minutes. And all done in one pan with only about 460 calories.
