I love this lemongrass chicken. It has this lovely caramelisation thing going on and lemongrass is one of my favourite ingredients. The original recipe is available here:
To make this for one I use the following ingredients:
- 1 tsp peanut oil
- 150g of chicken breast. (I normally buy about 4 chicken breasts at a go and chop them in to chunks of about 150 grams to freeze)
- 1 red chilli – chopped diagonally
- 1 stem of lemongrass
- 1/2 tbs fish sauce
- 1/2 tsp sugar
- 1 shallot – thinly sliced diagonally
I don’t put the roasted peanuts on top to keep the calories (and the cost down) and I don’t cook this one exactly as described in the recipe. I normally get the oil hot but not until it is smoking and I certainly don’t cook the chicken in batches. A benefit of cooking for one. I sometimes save a few shallots to put on top but at other times I have just cooked them all and that is just as good but not as pretty.
The cooking time on this one is pretty accurate and I can prepare this is less than the 10 minutes without the peanuts to chop. It works at about 250 calories without the rice. I normally serve this with basmati rice – about 1/3 of a cup works out about right for my calories.
