Honey Cajun Prawns (Shrimp)

A quick and tasty dinner where the sauce is nearly as the good as the prawns and that is hard to do.
  • A couple of sprays of olive oil cooking spray
  • 200-250g of prawns, peeled and deveined (I buy mine like this)
  • 1 Tbs of lemon juice
  • 2 Tbs of olive oil
  • 1/2 Tbs of soy sauce
  • 1/2 Tbs of honey
  • 1/2 Tbs of cajun seasoning
  • 1 tsp of chopped fresh parsley
  1. Put all the ingredients except the prawns and cooking spray in a bowl and mix until well combined.
  2. Toss the prawns in the bowl and make sure they are well coated.
  3. Heat a wok on a medium-high heat and spray with the cooking spray.
  4. Once the wok is hot add in the prawns and marinade and cook until the prawns change colour. Then whip them off the heat as they will continue to cook and you don't want overcooked prawns.
  5. Serve with lovely crusty fresh bread.
