Unstuffed peppers with mini potatoes

Why waste time stuffing peppers when you can have this delicious dish of unstuffed peppers with mini potatoes
Ingredients
  • 1 tsp of olive oil
  • 130g (1/4 lb) of minced beef (ground beef)
  • A third of a capsicum (bell pepper), diced
  • 1/4 of a brown onion, diced
  • 1/2 tsp of minced garlic (equal to half a clove)
  • 1 tsp of soy sauce
  • 1/8 tsp of dried chili flakes
  • 1/4 tsp of liquid smoke
  • 1 tsp worcestershire sauce
  • 1 tsp of cumin
  • 1/2 tsp of salt
  • 1/2 a cup (or just under) of tinned diced tomatoes
  • 180g (0.4lb) of mini firm potatoes (I used desiree)
Instructions
  1. Heat the olive oil in a skillet on a medium heat and once hot add minced meat.
  2. Brown the minced meat, about 5 minutes
  3. Once the meat is brown remove from the pan and set aside
  4. Add the onions, capsicum and garlic to the skillet and cook for about 10 minutes until softened.
  5. While the vegetables are softening, pop the potatoes in the microwave to cook on high for about 5 minutes. Before popping in the microwave pierce the skin of each potato a couple of times with a fork.
  6. Once the potatoes have cooked, quarter or halve depending on their size - you want decent bite sized pieces.
  7. Once the vegetables have softened add the meat back to the skillet.
  8. Add the soy sauce chili flakes, liquid smoke, soy sauce, worcestershire sauce, cumin, salt and tinned tomatoes.
  9. Mix well and let simmer for about 15 minutes, tossing in the potatoes about half way through.
  10. Serve
