Chicken, Mushroom and Spinach Casserole with Gruyere Cheese

This chicken, mushroom and spinach casserole with gruyere cheese. A healthy, delicious casserole all made in one dish
  • Olive oil spray
  • 1/4 cup of chicken stock
  • 3 tbs (45ml) of low fat milk
  • A pinch of salt and pepper
  • 130g of skinless, boneless chicken breast cut into bite sized pieces
  • 1/8th of a brown onion, diced
  • third of a cup of mushrooms sliced
  • third of a cup of spinach, shredded
  • 2 tbs (30g)of gruyere cheese, grated
  • 2 tbs (30g) pecorino cheese, grated
  1. Heat the oven to 175C (350F)
  2. Spray a small casserole dish with olive oil spray
  3. Combine all the ingredients except for the cheese and olive oil spray in the casserole dish or in a bowl.
  4. Mix well until all is combined. If you have mixed everything in a bowl, pop it into the casserole dish.
  5. Top with the cheese and cook until cheese is melted and starting to go golden, about 25 minutes.
