Red Curry Prawns

Creamy salty red curry prawns make a delicious quick dinner
  • 1 tsp of olive oil
  • 200g of prawn meat (shrimp)
  • 2 tbs of red or green curry paste
  • 100ml of coconut milk
  • 1 tbs of fish sauce
  • 1-2 tbs of coriander (cilantro) plus 1/2 tbs for garnish
  • 1 tsp of sugar
  1. Heat the oil in a saucepan on medium to medium-high heat
  2. Add the curry paste and fry for a couple of minutes
  3. Add the coconut milk, fish sauce, coriander and sugar to the pan and bring to the boil
  4. Turn down the heat and let simmer for a couple of minutes
  5. Pop the prawn meat into the sauce in the pan and cook for 3-4 minutes until the prawns are pink
  6. Take the pan off the heat and let set for a couple of minutes
  7. Garnish with coriander
  8. Serve over rice
