Black bean chicken and broccoli with noodles

A super quick one pot dinner for when the cupboard is a bit bare.
  • 75g dry pad thai rice noodles
  • 150g of skinless, boneless chicken breast, thinly sliced
  • 1 tsp of peanut oil
  • 2 tbs of black bean sauce
  • 1/4 - 1/2 tsp of dried chilli flakes (depending on how spicy you like things)
  • 1 tsp sesame oil
  • 1 tsp of minced garlic (equivalent to 1 clove)
  • 1 cup of broccoli chopped in to bite sized florets (about 70g)
  • 1 spring onion, sliced (for garnish)
  1. Put the noodles in a large bowl and cover with boiling water. Let them soak for about 7 minutes (follow the instructions on the packet)
  2. Heat the peanut oil in a wok (or skillet) on medium-high
  3. Add garlic to the wok and fry until golden (about 1- 2 minutes)
  4. Add the chicken and chilli flakes to the wok and fry until the chicken is sealed and is starting to go golden (about 4-5 minutes)
  5. Add the broccoli and black bean sauce and cook for 1-2 minutes. The broccoli should be warm but you don't want it getting soft.
  6. Drain the noodles and add the noodles and sesame oil to the wok.
  7. Cook the noodles until they are warmed through.
  8. Pop in a bowl and ganish with spring onion
