Fast Turmeric Chicken

  • 1 tsp of olive oil
  • 130g of skinless chicken breast cut into thin strips
  • 1/2 tsp of minced garlic
  • 2 kaffir lime leaves, shredded
  • 1 tbs lemongrass paste (I preferred the paste to the fresh lemongrass in this case)
  • 1 tsp of turmeric
  • 1 tbs of fried shallots
  • 1/2 tsp of sugar
  1. Heal olive oil in a skillet on a medium heat
  2. Add garlic and fry until garlic starts to go golden, a couple of minutes
  3. Add lemongrass paste and kaffir lime leaves and fry until fragrant, about 1 minute
  4. Add sugar to the skillet and stir into lemongrass and garlic
  5. Add chicken strips and turmeric and stirfry until cooked, about 5 minutes. It can be a bit tricky to tell when the chicken is cooked because the turmeric adds such a strong colour but with a bit of care you can tell.
  6. Garnish with fried shallots.
