As I have mentioned before, I am a bit of a mushroom freak. So when this appeared in my email – I think is was a yummly email about top recipes for the week I thought I would give them a whirl. Particularly as they managed to include two of my other favourite foods, bacon and cream cheese. Plus who can go past a recipe called the best stuffed mushrooms:
I wasn’t sure about how much topping to put on each mushroom. I used portobello mushrooms and when I buy them at the shop they are loose and I don’t know how much they weigh until the end. I ended up doing two mushrooms and between a quarter and half of the ingredients depending on each ingredient. So the mix was:
- 50g of cubed bacon (I find this easier to control in terms of portions than rashers)
- 70g of light cream cheese
- 2 tbs parmesan cheese (1 in stuffing and 1 on top)
- 1/4 tsp worcestshire sauce
- ground black pepper
- 2 portobello mushrooms (not sure of their weight but about 200g) with the stems removed
So I basically followed the recipe. I think the amount of stuffing I made was about right but I think there was a bit too much creamed cheese to bacon. I didn’t soften the cream cheese, it stirred in pretty easily with the bacon and other ingredients.
The main issue that I had was that someone popped by when the mushrooms were in the oven. I turned the oven off but even then the mushrooms got a bit crispy. I think if I had cooked them for the 25-30 minutes given they would have been very crispy.
I was disappointed with the cubed bacon I bought. I bought the supermarket brand rather than my usual brand as it was on sale. But it was much fattier than my usual brand and some chunks were pure fat. Bacon crackling is one of the few meat fats I like, if it is crunch enough. But not if the whole chunk is fat. I buy the cubed bacon as I find the rashers are often a bit thin for chopping or in this case crumbling. And to be honest I am not quite sure how you crumble hot bacon.
I also buy the cubed bacon to train my dogs. It makes a good training treat when I am asking them to do things that they aren’t very keen on such as putting on the muzzle to go to the vet. So not too much of the bacon gets wasted.
The recipe also means that I now have to eat more cream cheese… Life is very tough.
