There are a number of recipes out there for delicious creamy mustard chicken. I have tried a few and I just couldn’t get them to reduce to a single serve well. I made this honey mustard chicken saute but it doesn’t have that creaminess that others were promising.
I had almost given up on trying to make a single serve creamy mustard chicken when I came across this amazing recipe for chicken with leeks in a creamy mustard sauce. It has the added bonus of incorporating leeks which are one of my favourite vegetables to cook with.
I have made some minor adjustments to get it to work for me, including using chicken without the bone in as I hate the fuss of getting meat off the bone. I am extremely lazy when it comes to eating.
Not the quickest recipe to make but so delicious. I had mine with some mashed potatoes and the sauce with the potato was to die for. I cut my leeks finer than suggested so that they almost completely melted in to the sauce. I reckon this would work well if you were trying to hide vegetables from fussy eaters.
To make this for one I used the following ingredients:
- 125g of boneless, skinless chicken breast, cut into bite sized pieces
- 1 tsp of olive oil
- 1 tsp of butter
- 1/2 a leek, thinly sliced
- 1/4 of a brown onion, thinly sliced
- 1 tsp of minced garlic (equal to one clove)
- 1/4 of a cup of chicken stock
- 1 tbs of Dijon mustard
- 1 tbs of cooking cream
- 1 tsp of lemon juice
- 1/2 a tsp of paprika
- salt and pepper to taste
I made a few adjustments to the initial recipe including chopping the chicken into bite sized pieces. Because the pieces are smaller they should brown in a 2-3 minutes. I also didn’t add the second lot of oil before adding the garlic. I used a non stick pan and the oil leftover from the chicken was sufficient. I also didn’t remove part of the leek and onion mixture before adding in the stock. I wanted the leeks to melt completely. When the is added back in I only cooked it for 20 minutes. Cutting the chicken into small pieces helps reduce the cooking time.
Preparation time is about 10 minutes plus half an hour for the chicken to marinate. I didn’t find the leek took that long to prepare but I am not that fussy about cleaning it. Cooking time is 35 minutes. The dish has about 455 calories.
