I have been a bit stressed recently. I am starting a new job, finishing off my old job and getting ready to go on holiday. Dreadful timing for the holiday what with the new job but it is what it is.
Like quite a few people I am a stress eater and this has been compounded by farewell lunches and morning teas. My diet has gone out the window and I have put a bit of weight on. Not too much but it could get out of control pretty easily. On top of that I have found that I have developed crazy sugar cravings. I used to be able to eat blocks of chocolates, slices of cakes and other high sugar treast with nary a worry. But since losing weight, I have found eating too much sugar affects how well I sleep and my moods. I also have not felt at my most creative and have been struggling to work on this blog and other dreams I am chasing.
The holiday is nearly here so I have pretty much given up on trying to do much to correct my diet at the moment and have finally succumbed to that pinterest classic the chocolate mug cake. Sometimes you need to cut yourself some slack. While I am eating it for all the wrong reasons, it was very delicious. The plan is to get back on track after the holiday when I am all nicely relaxed. At least with this mug cake there isn’t loads of leftover cake loitering around the house.
I went with this recipe for a chocolate mug brownie from Real Mommy’s blog. I chose this recipe as I had all the ingredients in the house and was feeling super lazy. I was pleasantly surprised with how good the chocolate cake came out. It was moist and lovely and crumbly. Unlike some of the recipes on pinterest there is nothing to make it rise so you don’t end up with a messy mug/microwave. I added in some chocolate extract to the recipe that my Mum had bought me the other day. The original recipe doesn’t have this but I am making no guarantees about chocolatey goodness unless you include it.
To make this cake you will need:
- 4 tsp unsweetened cocoa powder
- 8 tsp granulated sugar
- 1 dash salt
- 1 drops vanilla extract
- 1 few drops of chocolate extract
- 4 tsp water
- 8 tsp plain flour
- 4 tsp butter
All up it too about 10 minutes to pull this together and cook it. Given the amount of sugar etc in this I am not going to scare myself by calculating the calories.
